Mimolette

From the Cheese Portraits series.
This is one of the most intensely colored cheeses I've found so far. Mimolette is from Normandy, France and has a cheddar-like texture. In order to attempt any translation of the intensity of this cheese's color, I found it necessary to set up the opportunity for the viewer to see the translucent brilliance in this composition. A very smart and beautiful friend commented that "It's very architectural, the Frank Gehry of cheese portraits."
