Testun al Barolo

oil on wood, 10x10

Testun al Barolo, original artwork by Mike Geno

From the Cheese Portraits series.

This Cow-Goat milk cheese is from Piedmont, Italy made by Beppino Occelli

Di Bruno Bros. site description:
"A beautiful, semi-firm cheese from Piemonte coated in pressed Nebbiolo grapes, the grape used to make Barolo wine. Testun al Barolo has a unique flavor that comes from the combination of the sharper flavor of the aged sheep's milk cheese beneath the pressed grapes and the bold, fruity sweetness of the grapes themselves. This is a complex cheese that pairs well with a full bodied Barolo wine."

The fun part was those macerated wine grapes mashed into the rind. They taste great too.
