Best of Show 3rd Place, 2012 from Emmi Roth USA
At the time of the competition this cheese was still called "Gran Cru Gruyere" but the Swiss owned Wisconsin maker has since been calling it Surchoix,
The challenge was to not exaggerate the yellow color of the cheese paste, since it is not anywhere as colorful as it is flavorful. This wedge smelled sweet and tempting during the entire process of painting it's portrait! I couldnt wait to get to the finish point so I could eat a third of this wedge as my lunch. Apparently Surchoix goes nicely with strong dark roast coffee.
This painting was commissioned by the American Cheese Society (ASC).
