This is a traditional clothbound cheddar made by Valley Shepherd Creamery in central NJ. They've recently opened up a stand and cheese making facility at Reading Terminal Market in Philadelphia, so this is part of a recent cheese splurge. Eran Wajswol, the owner told me how proud he is of this beautiful clothbound cheese and I dont blame him. It's sharp and rich. I loved painting it for all it's character and texture as rich as its taste.
