Firefly Farms, located in Maryland and founded by Mike Koch and Pablo Solanet, where they produce a range of cheeses from goats milk.
The Black & Blue has a longer aging period that produces a blue cheese with complex flavors. The outer casing of black wax allows moisture to be retained during aging as well as to provide a contrast to the white and blue interior.
I personally found the shiny black wax coating to be rather sexy and unexpectedly strong for a blue cheese. I couldn't imagine painting this large double portrait without focusing on that bold wax coating that shines like patton leather with all the bulges and muscular ripples across the surface.. Let's face it people, this is like the Batman of blue cheeses!
