From the Cheese Portraits series.
This white gouda, from the Brabant region of Holland, is made from the pasteurized milk of Saanen goats. The wheels are ripened in caves with slightly higher ambient temperatures to ensure proper drying and, in turn, fuller flavor.
I was particularly interested in how a goats milk gouda looks like a beautiful white albino of goudas. I decided to turn it just slightly from the light so it had some shadow and color change across it's othewise, bright surface.
