Cotswold originates in Gloucestershire County of England and is humble, often referred to as a "pub cheese". It's a creamy, buttery mild cheese like cheddar that has been supplemented with chopped onions and chives for added flavor. As a commission however, it proved to be a delicious change of pace for my normal cheese habit.
