Sometimes referred to as "squeaky cheese" cheese curds are actually fresh, young cheddar cheese in the natural, random shape and form before being processed into blocks and aged. They make for surprisingly great snacks! A patron had some sent to me overnighted, from Beechers Cheese Seattle. Beecher's makes some great cheeses that Ive already painted but this her challenge was a complex model that I hadn't bother to taste (they're not tasty looking) before painting it. After I finished I decided to throw one in my mouth. Well, the rest were gobbled up within minutes. They're great. (sigh).
