I had the pleasure of having a huge half wheel of this sent to me for a commission. As it happened, another patron fell in love with it and having a love for raclette parties, asked if I could paint one. The flavor of this is delicate but not too subtle. IT's rich and wonderful.
This is made by Emmi Roth USA, in Wisconsin.

Montanella Raclette (formerly known as Grand Cru Raclette). This cheese is made by cheesemakers trained in time-honored techniques that date back to the twelfth century. Handcrafted in small batches and cured in curing cellars, this washed rind cheese has a velvety, semi-soft body and a nutty, yeasty finish. This sensational melting cheese is a must for any authentic raclette dinner.
