Finally, a cheese from TEXAS! I have been searching for cheeses from states I hadn't previously represented with a cheese portrait. Many cheese mongers mentioned this beauty and so I contacted Mozzco directly and they were very generous to send me a couple to paint! After I finished it, I had the pleasure to devour it. I was blown away by the subtle flavors that made this crisp, fresh goat cheese simply... alive.
"Hoja Santa was created by legendary cheese maker Paula Lambert, owner of the Mozzarella Company in Dallas, Texas. Paula was careful to create a cheese that reflects its origins, and each of these young goat's milk rounds is wrapped in a velvety, heart-shaped leaf from the local (and eponymous) Hoja Santa plant (piper auritum). The Hoja Santa leaf imparts subtle tones of sassafras, anise, mint, and black pepper to this soft, fresh chèvre. " - from artisanalcheese.com
