Marieke Clove Gouda
Series: Cheese Portraits
Description: Teamed with dutch cheese makers, Marieke of Wisconsin, introduces a traditional Dutch flavor of the northern province of Friesland in the Netherlands to the American market. It's my first Wisconsin cheese portrait and it was a challenge due to the nature of Gouda. It's translucent, craggy, crystallized in areas and flaky even. With whole cloves and laden with whole cloves and cumin seeds. It tastes like the winter holidays!

Lake Effect

Description: Blakesville Dairy Farm in Port Washngton, Wisconsin has about 900 goats they milk and a new creamery opened in the summer of 2020. They also have one of my favorite talented cheesemakers, Veronica Pedraza. I've painted a number of her cheeses in the past and now that she's sent me some of her newest incredible creations, I'm looking forward to adding some more cheesemap entrees to Wisconsin, which is currently just a few behind the state of VT! This cheese is part of her "lactic-set" it's soft-ripened goat cheese inspired by Chaource. I love the bloomy rinds and this one is aged at least 15 days before being sent out into the world. I had it for a couple weeks too, so wonder if the alluring pattern this rind makes wouldve been even more prominent when I first got it. All I can say is I absolutely love it. It's got a mushroomy, ccreme fraiche lactic satisfying flavor that makes wish I ate goat cheese every day.

Description: This raw goat's milk cheese from Wisconsin has a creamy texture and a Parmesan-like flavor from aging more than 70 days.More from madame fromage: "Evalon is an award-winning Gouda-like wedge from cheesemaker Katie Hedrich in Chilton, Wisconsin. Katie stunned the world in 2011 when she won the U.S. Cheese Championship with Evalon. She had only been making cheese for three years. Evalon is sweet and nutty with a satiny finish. You'd hardly know it was a goat cheese since there is virtually no tang, and yet the flavor is slightly herbaceous, which is why Evalon pairs so well with chamomile."

Red Rock

Description: Red Rock is not just a beautiful cheddar, it's a creamy delicious cheese that has been considered the "working man's cheddar" and I'd say that's a lucky working man. Named for the local stone that surrounds the room in which it is aged, Red Rock is the newest creation from up-and-coming rock star cheesemaker Chris Roelli in Shullsburg, Wisconsin. I had the pleasure of seeing this cheese in person recently and meeting Chris Roelli and they're equally nice. I was struck by the natural rind cheddars color, of coruse - a result of a large dose of annatto. Also, the contrast with blue streaks held my attention. Im just so glad that my local cheese dealer, Dibruno's in Philadelphia, finally started getting this in from Wisconsin!

Roth's Private Reserve Wedge
Series: Cheese Portraits
Description: Winner of the "Best of Show" tied 2nd at the American Cheese Society's annual conference in 2015, this Wisconsin treasure is from Roth Cheese. The Private Reserve is made from a perfect batch of seasonal raw milk they get from local farms and is made in small batches. It's washed, brushed and flipped until it's reached optimal flavor in their Cellars, typically for six or more months. They claim to only release a batch when it is "perfectly, perfect" and that's believable when you taste it. It's no surprised it ranks among the best in show from over 1,700 cheeses judged. Of course, I painted it inside the red-ribbon color they achieved!

Montanella Raclette

Description: I had the pleasure of having a huge half wheel of this sent to me for a commission. As it happened, another patron fell in love with it and having a love for raclette parties, asked if I could paint one. The flavor of this is delicate but not too subtle. IT's rich and wonderful. This is made by Emmi Roth USA, in Wisconsin. Montanella Raclette (formerly known as Grand Cru Raclette). This cheese is made by cheesemakers trained in time-honored techniques that date back to the twelfth century. Handcrafted in small batches and cured in curing cellars, this washed rind cheese has a velvety, semi-soft body and a nutty, yeasty finish. This sensational melting cheese is a must for any authentic raclette dinner.

Grand Cru Surchoix Wedges

Description: Roth Cheese in Wisconsin makes this amazing award-winning Alpine-style cheese is as close to Gruyere you'll find in the US. Made from the freshest milk and in imported copper vats from Switzerland, this is aged a minimum of 4 months and has a robust earthy taste. This painting was a commission for cheesemaker Marc Druart, and this subject was one of the firsts he worked on at Emmi Roth USA which has won multiple awards worldwide. It's an honor to even know Marc some, and extra special to get to paint this surprise gift for him.

Blue Jay

Description: Blue Jay was a happy discovery at the cheese shop. I stopped by the Reading Terminal Market, in Philadelphia, because it's a magical place and I was hoping to find a new blue for a blue cheese party. The counter at Down Town Cheese did not disappoint me! This one caught my eye because it has juniper berries in it! The award winning blue from Deer Creek Cheese in Sheboygan, Wisconsin, claims this to be a "quintuple cream blue" ! Each batch has a ten-gallon can of cream added which makes it super mellow and buttery. The crushed juniper berries wonderfully compliment the blue strain that is balanced and savory and not at all what I consider to be "perfume-y". The botanical influence is simply perfect, making this a unique and delicious blue that I've not experienced anywhere else. After painting over 60 blue cheeses, I am thrilled to find a new and unique love.

Sriracha Gouda

Description: This sexy wheel is hot. Hand painted with Sriracha chili sauce and rubbed with crushed red peppers, this is the Jessica Rabbit of cheese. It's not too hot, it was just painted that way. The Dutch style Gouda is mellow and buttery which perfectly balances the specs of pepper mixed into it. At first it's just beautiful and easy (as it's easy on the eyes) and then the heat shows up, gradual and to just the right level that warms you up but not so hot you need to undo a button on your shirt; it's family friendly. The creaminess of the cheese really balances it out to a perfect bite that encourages more bites and more after that. A big thanks goes out to Marc Druart, cheesemaker at Roth Cheese in Wisconsin, for generously sending me a whole wheel of this hot commodity.

Jeffs' Select Gouda
Series: Cheese Portraits
Description: This beautiful Gouda is the result of a collaborative effort between two visionary cheese makers named Jeff, Jeff Jirik of the Caves of Faribault and Jeff Wideman of Maple Leaf Cheese; hence the apostrophe after the "s". Jeff Wideman, a master cheesemaker from Wisconsin, is the one who makes the cheese, which is then sent to the Caves of Faribault for aging, in Minnesota. Unlike typical Goudas aged in cold temperatures, this American original is aged in the warm and humid environment of the caves. The result is a full-bodied flavor with classic European nuttiness and a hint of caramel. Its annatto-rubbed rind produces the alluring vibrant red-orange color. Most gouda cheeses are covered in wax or plastic during aging. Instead Jeffs' Select annatto-rubbed rind is allowed to develop its own rind during the aging process and resulting in this gorgeous wheel. I was so fortunate to have received a whole wheel of this beautiful subject, and if you've had some of the best Gouda in the world, you'd understand why this won a Best in Show award at the American Cheese Society 2016 competition. This is an incredibly delicious sweet, caramel-nutty cheese with a firm fudge-like consistency that equates as heaven, in my opinion.

Cave Aged Chandoka
Series: Cheese Portraits
Description: Winner of the "Best of Show" tied 2nd at the American Cheese Society's annual conference in 2015, this is a midwestern collaboration that made magic (in my opinion). Wisconsin's LaClare Farms produced this mix of cow and goat milk cheddar. The wheels arrived at the Standard Market in Illinois where they were larded and bound in cloth to be aged around ten months. The flavor of this cheddar is incredible. It's grassy and mild and has just the right amount of cave aroma that makes your senses enjoy the history of its aging process; it feels like you are eating cheese royalty as a result. The texture is as perfect as I've ever found in a cheddar so it doesn't surprise me that it is ranked 2nd in North America, in a competitive pool of 1,779 cheese.

Cave Aged Bandaged Cheddar 2

Description: This is my 2nd portrait of this amazing cheddar. I had been sent a quarter of a wheel from Willi Lehner at his Blue Mont Dairy, who won Best In Show, 3rd place at the American Cheese Society's annual conference. The ACS commissioned it and I restrained myself from eating all of it right away, so I could get this 2nd painting in for myself. This time I focused a little more on it's beautiful cloth bound rind. Called the renegade cheesemaker of Wisconsin, Willi Lehner is a second generation cheesemaker with a strong swiss heritage. He developed an appreciation and influence of terroir on cheese in his youth, during a summers spent herding cows and making cheese in the Swiss Alps. Also, when Willi took the stage to accept his best in show ribbon, in lieu of an acceptance speech he opted to yodel.

Carr Valley won 2nd Place at the 2009 American Cheese Society Competition. Marieke Gouda Reserve

Description: This extra aged raw milk Gouda is like cheese candy. I stopped by my favorite cheese shop in South Philly, the original 9th street Di Bruno Brothers, looking for something that would glow. The Monger, Stefania put a piece of this in my hand and I wanted it, no NEEDED it. It's crazy good. I've always been amazed at Marieke since I first tried and painted their cheese. Marieke Penterman and family relocated from the Netherlands to the ideal grasses of northern Wisconsin and brought their traditional world class Gouda making to the USA. I've seen her profiled on CBS Sunday Morning, I've seen her countless times on stages accepting award after award for her cheese; this woman is a rock star, iconic and heroic. This 1000 + days aged wheel offers all the crystals that add subtle (and gratifying!) crunchy bits known as tyrosine to that rich and creamy texture of the cheese paste. Marieke Gouda has no additives, coloring and cares for and ages that sweet caramel flavor from old world recipes.

Dunbarton Blue

Description: This wonderfully flavorful blue-veined cheddar is made in Wisconsin by Roelli Cheese. Made more like a cheddar, "Dunbarton Blue" has a minimal bluing which seems to compliment the indulgent cheddar rather than compete with it. You can taste the earth and age in its body while, for me, being rewarded with the most gratifying mouthfeel that reminds me of wax that's just been melted and not completely firmed up after it begins to cool. I got seduced by this rather large hunk when I saw it on Dibruno Bros. counter. While contemplating taking some home to gorge on, I noticed how beautiful it looked as it was. The relic-like rind, the planar surface from sampling and the translucent blue veigns hiding their flavor just below the surface... I had to paint this, I decided, and paint it big.

Grand Cru Surchoix

Description: Best of Show 3rd Place, 2012 from Emmi Roth USA At the time of the competition this cheese was still called "Gran Cru Gruyere" but the Swiss owned Wisconsin maker has since been calling it Surchoix, The challenge was to not exaggerate the yellow color of the cheese paste, since it is not anywhere as colorful as it is flavorful. This wedge smelled sweet and tempting during the entire process of painting it's portrait! I couldnt wait to get to the finish point so I could eat a third of this wedge as my lunch. Apparently Surchoix goes nicely with strong dark roast coffee. This painting was commissioned by the American Cheese Society (ASC).

Little Darling

Description: This half wheel was given to me by a dear cheese friend :) Madame Fromage was sent this from her home state of Wisconsin. Here's some of what she's written in the past about this delicious cheese: "Little Darling is made by Brunkow Cheese, a family-run dairy cooperative in the wee town of Fayette, Wis. with over 100 years experience in cheesemaking. ... Little Darling is earthy and alluring. It gives off the fruity perfume of a Parm, but the taste is slightly more tart, with nutty, caramel notes. Near the rind, it tastes positively cavey -- a rustic trait I happen to like."

I snacked on some while I painted this ...um, to help focus on its beauty!

Pleasant Ridge Reserve

Description: This is a "champion" cheese and it comes from Uplands Farm, in southern Wisconsin. Pleasant Ridge Reserve has been awarded the American Cheese Society's Best in Show three times in 2001, 2005 and 2010! No other cheese has that honor. While out and about shopping for cheese with a very good cheese friend, we realized I hadn't painted this and it seemed like fate that we stumbled onto an extraordinarily interestingly textured wedge. Prior to starting this painting, I looked up Upland Farm's website. I was struck by their relationship to the landscape and decide to translate this portrait into a sunny pasture. I found this fun description at thecheesepeoplebeloit.com: "It is made only 5 months each year on a farm near Dodgeville, WI and only when the cows are outside grazing on manicured fields (the makers mow the pasture!) Washed and turned weekly it's entire life at the farm and we hear they even read excerpts from The Grimm Brothers to select wheels if they've developed just the right hue of mountain stone. Again, a masterpiece in all aspects and an excellent example of preserving the uniqueness of a certain terrain, in edible form."

Buttermilk Blue

Description: Emmi Roth USA makes an amazingly rich American blue cheese from raw milk that is like creamy sunshine! This slice of heaven (can you tell I like blue cheese?) is both sweet and tangy it's perfectly balanced to be bold and mellow all at once. If you have Blue-Turophobia friends (blue cheese phobic) then you need to introduce them to this. It's a gateway cheese.

Cave Aged Bandaged Cheddar

Description: This is one of the three highest ranked American Cheeses in 2013, winning the impressive Best In Show 3rd place. It was especially sweet a reward for cheesemaker Willi Lehner who is located just outside of Madison, WI where his Bleu Mont Dairy made this gem of a cheese!. It was especially rewarding to be at the awards ceremony and instead of an acceptance speech, Willi yodeled! This cheddar is exceptional. I'm so glad I have been commissioned by the ACS to paint the winners, because I hadn't had the pleasure of trying this until now! It's absolutely perfect.

Grand Cru Surchoix

Description: Emmi Roth, USA , generously sent me an 18 lb full wheel of this beautifully delicious cheese. I was commissioned to paint the top cheeses of the American Cheese Society first. Having all this great, and hard to get, cheese around it seemed foolish not to paint them each again, while I had the chance. By this 2nd time, they asked me to title it by its new name "Surchoix" rather than problematic "gruyere" a term that is controversial to use outside of it's region.

Prairie Sunset

Description: Inspired by the sweet midwest sunset, this American Original cheese is colorful and addictive. Marc Druart, the cheesemaker at Roth, sent me this gift of annatto colored mellow tasting cheese. The strong color doesn't mean a strong flavor but it's certainly delicious, especially as it gets to room temperature. I found myself eating about a half pound wedge, piece by piece, as I worked through this long day of painting it. This cheese is mildly nutty, creamy and just the right balance of milky tangy that keeps it interesting. As I painted this larger cheese portrait, I found my colors getting deeper and with dozens of reds and oranges mixed on my palette, I couldn't help but paint the background a bit like a late day violet sunset. Mostly I wanted the strong light I cast on it to translate just how stunning this cheese is in person.

Little Mountain

Description: This is the 2016 Best of Show winner 1st place champion from the American Cheese Society annual conference and competition in 2016. This is the highest ranked cheese in North America above more than 18 hundred entries! My luck of having the commission of all the " Best of Show" winners each year, means I get to have the best cheeses sent to me for it. This one is indeed scarce from it's enormous demand and long period of aging, so they could only spare this thin wedge which is packed with flavor and nuance. I decided to paint it inside the first place blue-violet ribbon color and standing defiantly as the little guy that won :) (maybe also a Prince tribute?) This alpine style cows milk cheese is Chris Roelli's newest cheese and his homage to his family's Swiss roots. Little Mountain is based on Appenzeller and made in 15 lb wheels which are washed with a proprietary blend of bacteria and brine. It's generally aged between 8 and 14 months. The winning wheel was aged 9 months. I am extremely happy to see this humble, hard working small family cheese operation take the top prize in American cheese. Roelli also makes two other incredible cheese subjects that Ive enjoyed painting : Red Rock and Dumbarton Blue.

Jeffs' Select Gouda Wedge

Description: This is the 2016 Best of Show (tied for 3rd) winner from the American Cheese Society annual conference. Essentially, this tied as the third best cheese in North America, ranked above more than 18 Hundred entries. I was fortunate to have received an entire 9 lb wheel of this incredible Gouda! It's SO delicious, nutty and with the most perfect mouth feel of gratifying as perfect fudge. It's especially handsome to paint, with its annatto-rubbed rind that glows ambers and crimson which shines here is in the white ribbon colored background . Chandoka Wedges

Description: Having fell in love with this incredible cheese the first time I painted this award winning cheddar, I knew I had to revisit it. I needed to explore in a larger painting with the change of colors and all it's glorious crumbly texture. It turned out to be quite a long painting day though, because my model became more beautiful and its colors more pronounced as I worked. In fact, this one took over 12 hours! I suppose I made my job a lot bigger by the complex set up. The wedge became two when I broke it in half, while deciding on the staging of this composition. The crumbled pieces lay like evidence of an explosion. Even after 12 hours under my lamp, these small bits tasted just as delicious. This image of the painting here doesn't really pick up the range of colors or all the subtle shifts that I focused on. I will likely have to rephotograph it once it's dry. This is highest ranked cheddar in North America for 2015, having won the American Cheese Society's "Best in Show, 2nd place" award, with over 1,700 competing cheeses. Roth's Private Reserve

Description: This American original is from Roth Käse, of Emmi Roth, USA. They commissioned this paitning to celebrate it's return to the market. I found a wonderful review on Sgate.com: "The Private Reserve starts with milk that has been thermalized, a heat treatment that stops short of pasteurization. The Europeans do not consider thermalized milk to be raw; American regulators do, so Roth's Private Reserve is, by our standards, a raw-milk cheese. ...I recently sampled a wedge from an 18-month-old wheel, and it was extraordinary, with profound aromas of beef bouillon, deeply roasted nuts, caramel and cow barn. The interior was deep gold, much darker at the rind, with a smooth, creamy texture that was moister than I expected - too moist to shave. The salt was pronounced, but everything about this cheese was concentrated. It reminded me of eating a dry-aged steak." After reading this mouth watering review, I had no choice but to conjour up a palette of nuts and dry-aged steak!
