Berthaut Epoisses

Berthaut Époisses is a classic French cheese revived by Robert and Simone Berthaut, when they decided to re-launch the production of Époisses with help of those who still remembered how to make it, in the mid-50s. This is a beautiful aromatic runny, oozy cheese that tastes much better than it poses for portraits! I was glad to revisit this subject in the winter, while my studio was still quite chilled and I worked on the cheese at a quick pace to capture the ooze but before it lost shape altogether. The rind was then dealt with and I love it for it's brilliant and fragrant (AKA stinky) presence that's hard to ignore.
