Named for the ruins of the Condor family dairy in Chattahoochee Hills, Georgia, this velvety, ash-ripened cheese is dense, complex, and rich. It's SO delicious. It comes from Many Fold Farm, where it's modeled after the similarly pyramid-shaped and ash coated "Valency" but instead of the traditional goats milk, this beauty is made with sheep milk.
