Alyce Birchenough of Sweet Home Farm, only sells their cheese two days a week at their farm shop; they don't ship so this is a rare cheese for most of the country. She was kind enough to bring me a gift of a whole wheel of one of her signature cheeses from Elberta, Alabama, when we both attended the American Cheese Society's annual conference. She kindly included a hand-written note, explaining how Perdido was named:

"Named for the bay that lies just east of the Sweet Home Farm that was frequented by pirates in the 16th century, this cheese is made with raw milk from our heard of Guernsey cows and aged four months or longer. The ash layer is made from organic, home-grown herbs which gives the cheese an herbal, slightly smokey flavor. The Natural rind is coated with carob powder."
