From the Cheese Portraits series.

This is the top ranked cheese in North America, for 2015. Earning "Best of Show, 1st place" at the American Cheese Society's 2015 conference and competition it won over 1,700 other cheeses submitted for judging!

Interviews I've found online, say Margaret Peters-Morris, owner of Glengarry Fine Cheese in Ontario, gives credit to the cheesemaker Wilma Klein-Swormink. Their hard work results in the ACS crowning its first Canadian cheese as Best in Show! And, what a cheese it is! Firstly, Im especially fond of blue cheeses (both eating and painting) and there's not a trace of doubt why it is ranked number 1. I suspect part of the indulgent success of Celtic Blue is because it's made from pasteurized milk and cream; they add cream! A mouth feel of perfection, it has a fudge-y texture and mild but wonderful flavor; it's blue bliss. Sadly, it's due to trade barriers, few in the USA will get to try it as it's not really available much in markets - which makes this commission even more satisfying.
