This tasty model is a goats milk cheese that was soaked in wine for 24hrs before being aged for 4 months. Lindsey Washkoviak and Ben Elzay, in Landers, Wyoming, were kind enough to send me a bit of their farmstead raw milk cheese from their Slow Goat Farm, before taking a winter break. I'm so glad to get this state onto my cheese map before their season completely ended.
