This gift of wonderful cheese was brought by a friend visiting from Belgium. He stopped by his local cheese shop in Antwerp, Kaasaffineurs Van Tricht and picked an assortment of great Belgian cheeses. Then he researched the best beers to pair with them to bring along. THIS is what defines a perfect guest!!! We tried them all and it was an incredible tasting tour but this pasteurized cow's milk washed rind cheese that is semi firm and aged for 3 to 4 weeks, tasted wonderfully like a young Reblechon. Tasting this cheese with the paired Belgian beer, "Vicaris Tripel", a cloudy whit beer with notes of yeast, spices, fruits and flower notes, was excellent. It was the one pairing where the cheese made the beer taste better!


Of all the great pairings, this wheel was among the largest and the one I managed to save some to paint. It was clear to me this memory of friendship needed to be represented by at least another cheese portrait from Belgium.
