I am SO grateful to be commissioned to revisit this incredibly indulgent cheese that Napoleon liked so much he declared it "the King of cheeses". Epoisses de Bourgogne was revived from near extinction after WWII by M. Berthaut. Named after the medieval village in eastern France, this pungent, creamy smear-rinded wheel rewards you with a mildly spicy and rather salty yet sweet flavor that makes your eyes roll to the back of your head while leaving you thankful you are alive.
Fun fact: Epoisses is actually a French word meaning "completely worth the effort" or "stinky but incredibly lovable" because the end result, a custardy bacon bomb, is oh-so-worth-it." - Curtesy of Murry's Cheese
