The folks at Slow Goat Farm, in in Landers, Wyoming were kind enough to send me some of their "secret" stash. They make this 30 day old raw sheep milk Camembert-style wheel from their east Fresian sheep Pheobe and Delila with Morel Mushrooms harvested on their property. Technically they cant sell it outside of Wyoming since it's not aged 60 days. This is a cheese for friends and I am beyond thrilled and honored.

They named it "Morchella" after the genus name for Morels which the cheese paste has bits of throughout. The mushroom lends a gentle earthy, meaty and slightly pungent flavor to the lactic cheese paste. I love mushrooms and I love cheese so I was not at all disappointed by my first ever mushroom cheese; more please!
