Rick at Central Formaggi sent me a hunk of this incredibly beautiful specimen to paint. The semi-hard table cheese is basically their "Fiore Dolce" infused with the spice of peproncino . The somewhat sweet aged sheep's milk paste balances incredibly well with the mild spice of the Calabrese pepper. This cheese is not "hot"; instead the quality of milk comes through with sweetness and the gentle pepper adds a layer without overpowering it. As a result of the balance of flavors, this cheese is absolutely addictive.
Naturally though, when I first set my eyes on this beautiful quarter wheel with a blazing red rind and fiery lighting bolts through the paste, I had hearts in my eyes like a smitten cartoon character. I did.
