Munster

Well known as "Munster Gerome" , this soft washed rind cheese is made in Orbey, in the north east region of France, close to the borders of Switzerland and Germany. Its named after the little town of Munster where it was originally made in the Middle Ages in abbeys and monasteries.
This AOC Appellation d'Origine Contrôlée translates to “controlled designation of origin,” which requires it to be made from unpasteurised cow's milk. Like most washed rind cheeses, it's got a pink, sticky rind and many would call it "stinky" but it's not nearly as strong a flavor as you'd expect. It's really delicious a little tangy and surprisingly balanced, more mellow than its unfair reputation.
This is NOT to be mistaken with the German-American processed cheese found in most deli counters.
