As a whisky lover, it was a pure pleasure to spend the day painting this aromatic farmstead raw milk cheese from the Ocelli collection. Wheels of this mix of either goat or sheep's milk along with alpine cow's milk cheese is coated in whisky-soaked barley and aged from 18 to 24 months. Whisky is infused as it ages covered by the soaked barley and adds a subtle smokey, nutty and fruity flavor to the rich fudgy paste. It's like any Occelli cheese, a true indulgence.
