Goat's Milk Clothbound Cheese

Quicke's in Devon, England, has been a major traditional cheddar maker for 14 generations. They do not, however, label this handcrafted, clothbound, locally-sourced goat's milk cheese as "cheddar" because traditionally cheddar is always made with cow's milk.
I was fortunate to have had a fun studio visit with Meredith Fitzgerald, of Fine Cheese Co. and she brought me this very hard to get gift of cheese. If you've had any of Mary Quicke's cheddars, you know it is among the best. This award-winning goat's milk wheel, usually aged for six months, has an amazingly buttery and creamy with a sweetness balanced by a rich grassy taste that expresses Quicke's famously lush green grazing fields.
