This traditional French delecacy is a small pastry with a custardy center and slightly crisp/chewy, intensely caramelized crust.

The lady at Metropolitan Bakery in Philadelphia described it as a creme brulee-like outer shell with a soft custard/cake center.

It's wonderfully delicious to say the least.
