The Italian Rainbow Cookie is an American bakery tradition. It was not born in Italy, though perhaps the inventor(s) were. It goes by several names but most commonly as "Rainbow Cookie". The three distinctly differently colored almond paste cake-like layers are held together with layers of jam, raspberry or strawberry and then coated on the top and bottom with chocolate. This makes it a colorful bite, difficult to make, no doubt, but that also explains why it's sometimes known as a 7 "layer cookie".

I am as surprised as anyone I admit to, that I haven't ever had them before this commission. Painting this subject, I looked far and wide for a variety and hoped to find some without "sprinkles" or as they're called in the Philly area: "Jimmys" on the east coast. Fortunately a friend was traveling to Bradley, Beach NJ and he picked me up a box of these beautiful and delicious models from Del Ponte's Bakery. They were kind enough to make a batch w/o toppings so I had the subject I needed to paint! They're also the best of all those that I sampled so far. I wish this bakery was closer to me... then again, maybe it's better that it's not!
