This jewel-like cross section of pork loin is dry cured Berkshire pork loin from 1732 Meats, in Philadelphia. Ari Miller was kind enough to give me a tour of his facility after I mentioned my interest in some charcuterie painting. He cured this with dry powdered pomegranate seeds. It's incredible to eat as its flavor is deep and full yet mellow and the fat melts in your mouth like butter.

"Lonza" is the eye of the pork loin. It's usually one of the leanest cuts of pork, it gets dry salted, seasoned and netted before being aged for several months. Thin slices are packed with a subtle but rich flavor that is absolutely beautiful and delicious.
