Also known in Italy as "Capocolla" this traditional Italian and Corsican pork cold cut (salume) is made in Philadelphia by Aril Miller, at 1732 Meats.. I was so glad to finally get to paint this beauty of a meaty model he gave me during a tour of his amazing facilities. The flavor was not what I expected when he told me he cured this Berkshire pork "baby" of his with hot Indian lime pickle. It was a rich wrestling of sweet and savory and I found myself needing to slice some extra bits off before starting the painting, ... y'know, for research purposes.
