Description: This delicious cheese, formerly known as "Ewetopia" has had a recent change of name, due to some identity crisis that might involve a larger company with the same name... It was sent to me by Ana at Dayspring Dairy so I could add the state of alabama to my cheesemap. It's made from a recipe from Holland, specifically designed for raw sheep's milk, aged for a minimum of 2 months and hand-painted with cream wax to keep in the moisture. The results are bliss on account of the creamy, rich sweet and nutty flavor. I love it!

Description: Alyce Birchenough of Sweet Home Farm, only sells their cheese two days a week at their farm shop; they don't ship so this is a rare cheese for most of the country. She was kind enough to bring me a gift of a whole wheel of one of her signature cheeses from Elberta, alabama, when we both attended the American Cheese Society's annual conference. She kindly included a hand-written note, explaining how Perdido was named: "Named for the bay that lies just east of the Sweet Home Farm that was frequented by pirates in the 16th century, this cheese is made with raw milk from our heard of Guernsey cows and aged four months or longer. The ash layer is made from organic, home-grown herbs which gives the cheese an herbal, slightly smokey flavor. The Natural rind is coated with carob powder."
