Description: Named for the ruins of the Condor family dairy in Chattahoochee Hills, Georgia, this velvety, ash-ripened cheese is dense, complex, and rich. It's SO delicious. It comes from Many Fold Farm, where it's modeled after the similarly pyramid-shaped and ash coated "Valency" but instead of the traditional goats milk, this beauty is made with sheep milk.

Description: Sweet Grass Dairy's raw cow's milk blue cheese, named after the maker's 2nd oldest child Asher, is incredibly delicious and remarkably beautiful. It first caught my eye at the cheese counter of Di Bruno Bros, in Philadelphia. It had cheese paste pocked full of blue dots, like a dense constellation or leopard print. I later discovered this was the result of a rigorous 50 piercings on each side of every wheel, allowing airways, passages for the blue to fully integrate into the cheese aging process. It's a really wonderful blue, as it's meaty-mushroomy and mellow and creamy at the same time. The natural rind adds a striking contrast to the black/blue vs. white paste. I had already bought a lot of cheese before this blue caught my eye at the counter, so I only bought a small amount. Instead of painting it, I made it part of a great cheese board that night. I was more than grateful when someone at Sweet Grass reached out and offered to share some of their cheeses with me. I was thrilled to find this wedge of Asher Blue wrapped in shiny silver foil; I knew I'd have a lot of fun with this!
