Ledyard

Ledyard

Series: Cheese Portraits

Description: Ledyard, from Meadowood Farms in Cazenovia, New York, is a soft-ripened sheep's milk cheese styled after Robiola. It's hand-wrapped in grape leaves that have been soaked in deep purple - a wheat beer infused with Madison County concord grapes. I had the pleasure of meeting Veronica Pedraza, the cheese maker, and seized the opportunity to nag her about sending me this beauty to paint. The portrait was a fun challenge, as the leaves added a Baroque element that I embraceds fully. The cheese itself started to ooz almost instantly so I had to work quickly. Then I willed myself to eat it as slowly as I could.

Lorenzo

Lorenzo

Series: Cheese Portraits

Description: The fine folks at Meadowood Farms, in the center of New York state added this to their collection of portraits of award-winning cheeses. "Lorenzo" is an alpine style washed rind sheep milk, raclette-like cheese that doesn't get too stinky but has an enormously good flavor. The wheels are washed with local cider from nearby from the Critz farm and aged for four months. The line patterned rind was a fun challenge that I only managed to completed because I had a full wheel sent to me, allowing strength to be maintained from snacking on this cheese the entire time!

Coach Farm's Peppercorn Brick

Coach Farm's Peppercorn Brick

Series: Cheese Portraits

Description: This is a goat cheese from New York State. Another great cheese from nontraditional makers: Coach Farms they went from coachleather goods to highly regarded cheeses!I had this cheese for much longer than I thought I would before getting to paint it. I decided to use a thin sharp knife to trim off the front side and make it fresh. In doing so, I noticed that the blade must have pushed a couple peppercorns through the soft creamy cheese creating those runway-like groves. Naturally, I found it even more interesting and painted the slice as a type asymmetrical of mirror image.

Eden

Eden

Series: Cheese Portraits

Description: This is an award winning cheese, earning "Best in Show, 3rd" at the American Cheese Society's annual conference. It's also extremely delicious and I got to paint it and eat it! "Made by Sprout Creek Farm, which is a 200 acre working farm located near Poughkeepsie, New York. Originally founded by two nuns from a religious order that focused on education and teaching, Sprout Creek Farm was established with a view to continuing this mission, which it undoubtedly does." - culture magazine Eden is a beautiful washed rind cheese made from raw cow's milk. I loved the pillowy patterned rind and that incredibly addictive crystallized crunch that it offers to accompany the rich, fruity cheese flavor. It's really a treasure to have half a wheel sent to me!

Miranda

Miranda

Series: Cheese Portraits

Description: According to one of my favorite cheese blogs, "cheese notes" who did a great job writing up this beautiful cheese called Miranda, it's from up-state New York cheese maker, Jos Vulto. Miranda is made in small Italian cheese moulds which makes such an alluring basket textured rind that I was drawn to it the moment I saw it. Another interesting detail is that this delicious washed-rind cheese is washed with absinthe. Mmmm. I was lucky to get my hands on it since I've been told it's scarce outside of NY state and it's from this relatively new cheese maker in high demand. Another endearing element I found on Vulto's own blog: "Last December (2012), Miranda, my wife, died. She was a big supporter of my cheese making venture and a beacon for me to hold on to when I was overcome with doubt. One of her wishes was for me to make a cheese and name it after her" . After I finished this portrait and finally had a chance to taste this wonderful cheese, I can attest, this is a worthy monument of life and beauty.

Ten Eyck

Ten Eyck

Series: Cheese Portraits

Description: This cheese portrait is another result of the large gift of cheeses sent to me from Veronica Pedraza at Meadowood Farms in Cazenovia, New York. I could not pass up the chance to paint Ten Eyck, which is a sheep's milk, Spanish-styled firm cheese with a striking gray-brown rind that was the challenge my eye was most attracted to. Painting this arcing ridged rind I had thoughts of zen rock gardens and love how it contrasts the Ivory cheese paste and the luminous glow of the standing wedge. This double-portrait cheese painting is a bit larger than most of my cheese portraits which I felt was necessary to capture the details of the cheese.

St Stephen

St Stephen

Series: Cheese Portraits

Description: This heavenly triple cream cheese is crafted in Stephentown, NY by an artisan creamery named "Four Fat Fowl". The name refers to a history of the area being a Dutch colonized community in the Hudson Valley and the last "Patroon", being a landholder named Stephen van Rensselaer. Stephentown was named after him; he was considered a lenient landlord because he allowed tenants who had been there for seven years or more pay rent of "four fat fowl", a day's labor and ten to twenty bushels of wheat per hundred acres. The creamery, understandably, couldn't resist using part of this colorful history when choosing their name. St Stephen the cheese is silky creamy and has a taste of freshness and happiness all at once. The lactic flavor has a buoyancy (not sure that's really appropriate a term for a flavor) that is bright, light and requires considerable will power to restrain from eating a whole wheel all at one sitting!

Blaak

Blaak

Series: Cheese Portraits

Description: This is what I consider "celebrity cheese". Blaak is from the reality show "The Fabulous Beekman Boys". The show propelled the couple into fame along with the farm they made into a viable business out of necessity during the 2008 recession. Located in Sharon Springs, NY, the Beekman farm raises a herd of goats among other animals. "Blaak is an Italian-styled semi-hard cheese with an edible ash rind not found on any other aged goat cheese. A combination of 60% raw goat and 40% raw cow milk gives this formidable fromage an earthy, savory flavor with a touch of acidity which increases with each bite." - The House Mouse, www.housemouseoncheese.com Friends of mine ordered this seasonal beauty and offered to loan me their newly attained wheel, for the cause! I loved the dramatic deep black ash rind, though it made it a challenge to do the basket mold rind texture.

Conundrum

Conundrum

Series: Cheese Portraits

Description: I recently found this incredible wheel at the Reading Terminal Market, in Philadelphia. "Conundrum" is made by Meadowood Farms located in Cazenovia, NY. One of my favorite cheesemongers, Zeke, convinced me I needed to paint this cheese; the rind is too beautiful not to! I could not disagree. It was easy to buy a whole wheel of this rarity-in-my-neck-of-the-woods. It's incredibly flavorful yet mellow and heavinly-creamy after sitting out for several hours - as a good model. As I later discovered, there's a story here. This beautiful cow's milk cheese was aptly named for the fact that it's a mistake. It was intended to be a paglierina style but it didn't turn out as expected- though delicious nonetheless.

Strawbridge

Strawbridge

Series: Cheese Portraits

Description: Meadowood Farms sent me their pasteurized sheeps' milk cheese that is modeled after the famed Montenebro from Spain. The soft oozy paste is light, springy and chalky and has a tart, tangy, and slightly citrusy flavor. I decided to paint this one with the green and white check patterned wrapper that Meadowood Identifies with, ever since I met the Cheese maker, Veronica Pedraza who was wearing a shirt that matched it!

Rippleton

Rippleton

Series: Cheese Portraits

Description: This is the third cheese I've painted by Veronica Pedraza at Meadowood Farms in Cazenovia, NY. I had painted two others (Ledyard and Strawbridg) and she suggested to make it a trinity and sent me a wonderful box of their cheeses. Rippleton is made from sheep's milk and washed with "wort" (unfermented beer) and is deliciously meaty, slightly fruity and delicious.
