Bamboozle
Series: Cheese Portraits
Description: This is 2022's "Best of Show" 2nd place champion at the American Cheese Society competition. I'm thrilled to paint another Best of Show winner from my home state, pennsylvania. Goat Rodeo doesn't just make some great award-winning cheeses, they're also such nice people, like so many cheesemakers I have had the good fortune to meet. This semi soft washed rind mellow and buttery cheese is made with a goat and cow mixed milk and washed with beer from the Cinderlands Beer Co. It has some nutty and meaty notes and to me, just melts on the tongue like sunshine. It's always an honor to paint the portraits of the best of show winners, and so this one has the traditional red ribbon background color which I think nicely harmonizes with that orange-pink rind.

Linden Dale Tomme
Series: Cheese Portraits
Description: I am so happy to have picked up this tasty wedge of aged goat Tomme from another pennsylvania maker. This was the first I've painted from Linden Dale Farm, in Lancaster, PA. The Mellingers run this family business, a 7th generation goat dairy farm, producing milk, yogurt, cheese and caramel among other products. This traditional farmstead hard goat cheese is a mild, earthy Tomme with a natural rind. There's a balance of nutty and the slightest sharpness. The beauty of the raw milk and cave aging for 8-12 months adds all the flavor one can savor with delight.

Ricotta Salata Vecchio
Series: Cheese Portraits
Description: Caputo Brothers Creamery, in Spring Grove pennsylvania sent me an unexpected gift, this beautiful wheel of cows milk cheese but with very little information about it. The words 'Ricotta" means re-cooked, 'Salata' means salted and 'Vecchio' means old, aged. It was, however, plain to see this magnificent model for me to paint is a pressed ricotta wheel, which normally is custard-like soft. This extra aged wheel (6-8 weeks) is firm and with less salt than regular salata, which they say helps "create a higher moister cheese and promotes a rind to develop resulting in a nice and flavorful table cheese." That's an understatement; its really wonderful. There were cartoon hearts in my eyes when I first unwrapped this model in my studio. The complex textural rind reminds me of that marbled pattern of school composition notebooks, but with tiny bursts of color surfacing here and there. Translating that magical rind in paint was my humble goal, which I don't believe is a fair situation for any artist to be in.

Red Cat Wheel
Series: Cheese Portraits
Description: This is one of my favorite pennsylvania Cheeses, made by one of my favorite cheese makers, and one of my favorite humans: Sue Miller, at Birchrun Hill Farms. I was able to get a whole wheel of this crazy good washed rind raw milk beauty when I visited the farm on one of their incredibly fun Cheesy Friday Night Happy Hours - (every friday evenin!). It was a fun challenge, because I had a chance to really indulge in this beautiful pinkish orange rind. Really this painting is all about the rind.
