This Italian cheese from the Piedmont area was suggested to me by my friend Madame Fromage, who accompanied me to Wedge + Fig cheese shop in Old City Philadelphia for lunch and cheese shopping.
I found the brainy rind especially attractive and cake-like. It's such a light yet dense delicious cheese. I'm hooked on yet another subject which I've devoured the moment I completed this cheese portrait.
