Teamed with dutch cheese makers, Marieke of Wisconsin, introduces a traditional Dutch flavor of the northern province of Friesland in the Netherlands to the American market. It's my first Wisconsin cheese portrait and it was a challenge due to the nature of Gouda. It's translucent, craggy, crystallized in areas and flaky even. With whole cloves and laden with whole cloves and cumin seeds. It tastes like the winter holidays!
