Shropshire Blue - made by the Colston Bassett Dairy who are famous for their stilton in the UK. "Shropshire blue has a lovely creamy texture and slightly more mellow flavour than stilton. The orange colour is from the addition of annatto - a natural vegetable dye."
Oh, this cheese is so beautiful to eat, it reminded me of the work of Maxfield Parish, which inspired the color scheme.
