I picked up some of this excellent lactose-free cheese (Ive learned, once aged any time more than two weeks and it's pretty lactose free) for a friend and decided to take a chunk home for myself. Naturally I painted it but am now wishing I didnt have to choose the side over the rind to view. These wheels of cheese are made in baskets and the rinds make that very apparent. This is a clean, healthy cheese, to me, with some mild nutty pecorino-like effect. It's really great once it's been sitting out a few hrs (like when you paint a portrait of it).
