Auricchio Stravecchio Provolone

oil on wood, 10x8"

Auricchio Stravecchio Provolone portrait by Mike Geno
Zeke from Di Bruno Bros. notified me of this beautiful Provolone that arrived in the shop, full of interesting striations. I was even more interested with the subtle color changes in the strata of cheese as it neared the rind.
info I found:
"Auricchio Stravecchio The long-established, traditional flavor of PROVOLONE : Auricchio Stravecchio is made according to an ancient recipe that requires a very slow aging period of over a year in special rooms. Stravecchio is easy to recognize due to its brown protective coating and the pelure paper “skin” with white watermark and white Auricchio brand logo, which adds an air of distinction and authority to this true king of the table."
