Taleggio is a smear-ripened Italian cheese named after the caves of Val Taleggio. It’s one of the oldest soft cheeses produced in every autumn and winter. It has a fruity tangy hint with a savory meaty goodness I can't help but devour, especially at room temperature. As I painted this semi-soft cheese, it started to shift and droop to the left some which added a fortunate pie-filling bulge to that I loved.
