Joe from Dibruno Bros. offered this ancient looking cheese. He explained that it hadn't been in for a couple years and I am a sucker for any delicious wedge that looks like the history that made it taste so good.
Testun di Capra is a washed rind goat's milk cheese hailing from the Piedmonte region of northern Italy. The name means “hard head” and it refers to its compact consistency. It is produced with goat or sheep and cows’ milk, from animals that are free to pasture during summer. So it's a great fall time cheese.
