Inspired by the Wabash Connonball from Capriole Goat Cheese, Birchrun Hill's cow's milk homage is coated with a sprinkle of sumac before aged and becoming an incredibly lush and tangy lactic treasure. When Sue Miller gave me over two versions (the other has an Espolete pepper coating) I was excited to unwrap a burgundy-colored ball. Alas, that's not how bloomy rinds work! haha. The beautiful white velvet coating starts to wrangle and spot as it gets older, ensuring you get a cheese with this beautiful cream line along the outer layer. The sumac is just barely visible under the rind but the flavor of the finished cheese bomb is wonderful.

Initially made for the CSA that they partner with Taproot Farm, this cheese didn't have a name. When the farmer/owner, Ola, expressed her love of it, the cheese was named after her.
