I was just introduced to the newest addition to the Cypress Grove portfolio. They're one of the earliest Cheesemakers to lead the American artisanal cheese renaissance as they're nearly 40 years old. This new addition is a perfect 4 ounce serving size little bloomy rinded round that offers a guilt-free luxury of not needing to share it! It is incredibly gratifying, especially after modeling in my studio for a day. At room temperature this cool bite turns gooey and buttery as the flavor is lactic and mushroomy good.
