Blacksticks Blue
oil on wood, 10x10"
Cheese shopping at Downtown Cheese, at the Reading Terminal Market, in Philadelphia. Blacksticks was one I had heard of, but not seen in person. The annatto tinted yellow-orange paste caught my eye, but getting a new blue was really my main goal and it was a fine (and tasty) result indeed.
Butlers Farmhouse Cheese is a fourth generation family business in Lancashire, England. Their farmhouse cheeses are made of milk from the Butler’s family herd of cows that's immediately pasteurized and goes right into the vat for making. Named after the family's farm, "Blacksticks" is a very creamy lactic blue in which you can really taste how good their milk is. This blue cheese would serve as a gateway blue as well as any; it's incredibly flavorful (flavourful) as a blue and yet very mellow. Blacksticks Blue is really delicious.
