This is one of the earliest (1988) cheeses made by one of the earlier pioneer American farmstead cheesemakers, Judy Schad at Capriole in Indiana. This round is wrapped in chestnut leaves soaked in Woodford Reserve Bourbon then plastic sealed so that it stays fresh, tangy and though a lil boozy, it remains light and citrusy and very silky and soft. It's amazing really.

Originally named "Banon" after the French goat cheese round that it was modeled after. It was later renamed "O'Banon" after ex-governor and friend of the farm, Frank O'Bannon passed away.

I especially loved unwrapping this six ounce, 3 inch round and finding the leaves imprinted on the soft rind, even leaving traces of some of the color.
