I came across this sheep's milk blue at Di Bruno Brothers in the Italian Market in Philadelphia. The long Italian name was more than a mouthful and then I got a taste of it and it was even bigger. The name translates as "Blue-veined Sancarlone Sheep's Milk".
Guffanti presents this as a new blue from the province of Novara in the Piedmont region in northwest Italy, to the west of Milan. It's an incredible mild, yet full bodied raw milk blue cheese that has a wonderful taste after a long 10+ hour painting day.
