I had some fun playing with my food again. In the studio "cheese cave", aka mini fridge, I had been hoarding a pack of incredible La Quercia Prosciutto. It was fun to just enjoy the beauty of a paper-thin gem-like slice of rich dry-cured ham.

La Quercia makes the finest in the USA as far as I can tell. They raise heritage Berkshire pigs on acorns to produce deep red, smooth, sweet and nutty ribbons of indulgence. I had this pack for quite some time but I found it incredibly mild and delicious, and basically melted on my tongue. It's so good.

FYI: Prosciutto is an Italian gift to the world and it is pronounced: prÉ™-SHOO-toh. It is not per-zuit! People say to me "what's the big deal if we skip the last vowel!?" and I ask, well, why don't you say "spaghett" ? :)
