I had an extra wedge, originally bought for a commission to revisit this beautiful Danish blue cheese, so I decided to go ahead and paint it. I like this for the fact that half of the mold spikes, creating the vertical lines, are just visible through the translucent creamy cheese.
Also, this was a much thinner slice on a hot day and it began to slightly turn color to a warmer cream off-white. It made sense therefore to go with a cool background.

I love this cheese for so many reasons. If you haven't tried it, FIND IT, TASTE IT! It's incredibly mellow and yet super flavorful. You can eat it by itself and not miss the cracker or bread.
