I was commissioned to paint this cheese portrait for the 25th Anniversary issue of Cooking Lite Magazine, November 2012. They requested a creamy, oozy brie-like cheese and after speaking with one of the most talented cheese writers, Madame Fromage, she suggested this Pennsylvania cheese by Calkin's creamery.
