Jersey Blue is a 100% Jersey cows’ milk cheese from Switzerland made by Willi Schmid. It took “World’s Best Jersey Cheese” at the second annual World Jersey Cheese Awards in June 2010. I was struck by it's beautiful blue veins.
Rather than spike air holes into this cheese for the blue's entry, the curds of Jersey Blue are just wrapped loosely and that lets the molds spread inward naturally. The results are meandering rivers and tributaries of beautiful blue.
Flavor wise, it's just as beautiful. This is a light, creamy mellow blue for special friends or ...keeping to oneself.
