This rich and buttery tasting goat’s milk cheese comes from the Canary Islands. It is made from the Majorera breed of goats on Fuerteventura, the Canary Island closest to Northern Africa.
Its brillioantly colorful rind is liberally coated in pimentón pepper, which is also known as smoked paprika - but the Spanish version seems both smokier and spicier. The texture was a fun challenge similar to a crystallized aged Gouda.
