 Ann at Dibrono Bros. suggested this gem when I asked what was new and interesting. She explained this pricey cheese was quite rare and beautiful. I recognized those unique blue veins from Jersey Blue, made by Willi Schmidt. He also makes this mellow, grassy version with Buffalo milk which is much creamier and fatty so the flavor is mellow and texture fudgey.
