"Big Bluff Tomme" is an aged slicing goat cheese with a natural rind rubbed with extra virgin olive oil and Reichi mushroom powder. It comes from Terrell Creek Farm, in the Ozark Hills of Missouri. I met Lesley Million at the American Cheese Society annual conference and she was happy to help me with my cheesemap goal by providing this delicious wedge. The farmstead dairy uses only the milk of their own animals and it seems every piece of cheese from there comes with an "Animal Welfer Approved" sticker, likely due to happy herds on a farm "bathed in the beauty of nature".
